Zucchini Parmesan
Do you have an abundance of zucchini or summer squash from the garden? Bake up this zucchini parmesan and enjoy some garden fresh produce.
Ingredients
6-8 small zucchini
6 cups prepared marinara sauce
3 cups shredded mozzarella cheese
2 cups shredded parmesan cheese
Olive Oil
Salt and Pepper to taste
Instructions

Preheat your oven to 350 degree’s.

Spray a 9x13 baking dish with vegetable spray and set aside.

Line a baking sheet with parchment paper and set aside.

Cut the zucchini into thin strips and place on the prepared parchment paper. Drizzle with olive oil and sprinkle with salt and pepper.

Place in the oven for about 20. After about 10 minutes, turn the zucchini over and drizzle with olive oil, salt and pepper. Continue roasting for about 10 additional minutes.

Remove from the oven and set aside to cool.

While the roasted zucchini is cooling, ladle 2 cups of the prepared marinara sauce into the bottom of the baking dish. Place enough of the roasted zucchini strips on the bottom of cover it.

Sprinkle with shredded mozzarella cheese, parmesan cheese and more prepared marinara sauce. Continue layering with zucchini, cheese and sauce until all the zucchini is used up. Finish with a sprinkle of cheese and bake off in the oven for about 30 minutes or until bubbling and cheese has melted and slightly browned on top.
