Zucchini Lasagna Roll Ups
These zucchini lasagna roll ups are an easy and delicious idea for dinner.
Ingredients
4 small zucchini, thinly sliced
1 1/2 cup ricotta cheese
3 eggs
1 tbsp Italian seasoning
2 cups marinara sauce
2 cups shredded mozzarella cheese
Olive oil
Salt and pepper to taste
Instructions

Preheat your oven to 350 degrees.

Place the thinly sliced zucchini strips on a parchment lined baking sheet. Drizzle with olive oil and using a pastry brush, make sure the olive oil is spread all over the zucchini slices.

Bake the zucchini strips for about 20 minutes or until they are tender.

While the zucchini strips are baking, mix the ricotta cheese, eggs, Italian seasoning and 1 cup of the shredded mozzarella cheese together.

Spoon 1 cup of the marinara sauce into the bottom of the baking dish.

Place a spoonful of the ricotta mixture onto the bake zucchini slices and roll them up. Place them seam side down in the prepared baking dish.

Spoon the remaining sauce over the top of the zucchini lasagna rolls and sprinkle with the remaining cheese.

Bake the prepared zucchini lasagna rolls for about 30 minutes or until the cheese has melted and is bubbling.

Remove from the oven, serve and enjoy!
