Zucchini Fritters
I like making these zucchini fritters for brunch but you can serve them with any meal. The fresh herbs from garden really make these fritters incredible delicious!
Ingredients
2 cups freshly shredded zucchini
3 eggs
1/2 cup self-rising flour
1 tsp salt
1 tbsp each freshly chopped basil, parsley, cilantro, thyme, rosemary, dill and oregano
1/3 cup finely diced onion
Cooking oil
Instructions

In a large bowl, combine all the ingredients and mix together until combined.

Heat a large fry pan on the stove and add enough oil to lightly coat the bottom of the pan.

Spoon about 1/3 cup of the zucchini fritter batter into the prepared. Continue spooning the batter into the pan like you would pancakes.

After a couple of minutes, careful “flip” the zucchini fritters over to cook bold sides to a golden brown.

Serve the zucchini fritters with your favorite brunch or dinner items. On air, I served them with a simple green salad. Enjoy!

these look so good…question…can I use dried herbs instead of all fresh…thinking of the parsley, dill, oregano…
