Zucchini Bars

Zucchini Bars

These zucchini bars are delicious and a wonderful way to use zucchini. Whip these up for dinner and watch them disappear!

Ingredients

2 cups finely shredded zucchini
3 eggs
1 cup oil
1/2 cup canned milk (evaporated milk)
1 tbsp vanilla
1/4 cup cocoa powder
1 tsp baking soda
1/4 tsp baking powder
2 1/2 cups flour
2 cups sugar
1 tsp salt
For the Frosting: 1 stick butter, 8 tbsp
3 tbsp cocoa powder
1/4 cup canned milk (evaporated milk)
2 cups powdered sugar, adjust as needed

Instructions

Preheat your oven to 350 degree’s.

Spray a baking sheet (jelly roll pan) with vegetable spray and set aside.

In a large bowl, combine the finely shredded zucchini, eggs, oil, canned milk, vanilla cocoa powder, baking soda and baking powder. Mix everything together to combine.

To the zucchini mixture add the flour, sugar and salt. Mix everything together until well combined.

Pour the zucchini batter into your prepared baking sheet pan and using a large spoon, gently spread the batter into the pan.

Place the zucchini bars into your preheated oven and bake for approximately 25 minutes or until fully cooked. Every oven is different so adjust cooking times as needed.

When baked, remove the zucchini bars from the oven and let them cool.

To make the frosting, melt the butter in the microwave and add the cocoa powder, canned milk and powdered sugar. Adjust the powder sugar amount to get the consistency of frosting you want. I do mine more like a glaze but adjust however you choose.

Cut into bars, serve and enjoy!

    I made these yesterday, August 3rd….they are the best “chocolate zucchini “anything I have ever tasted!…that frosting is amazing.
