Experience the perfect blend of healthy and hearty with our Zoodles and Bolognese Sauce recipe. This dish combines the low-carb benefits of zucchini noodles with the rich, savory flavors of traditional bolognese sauce. Perfect for a weeknight dinner, it’s a delightful way to enjoy a classic Italian meal with a nutritious twist.

Ingredients

4 medium zucchinis
1 tablespoon olive oil
1 pound ground beef (or turkey)
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 large carrot, finely chopped
2 celery stalks, finely chopped
1 can (28 ounces) crushed tomatoes
1/4 cup tomato paste
1/2 cup red wine (optional)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Fresh basil for garnish (optional)
Grated Parmesan cheese for serving (optional)

Instructions

1
Wash and trim the ends of the zucchinis.
2
Use a spiralizer to create zucchini noodles (zoodles). If you don't have a spiralizer, you can use a julienne peeler or a mandoline slicer.
3
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
4
Add the zoodles to the skillet and sauté for 2-3 minutes until they are slightly tender. Season with salt and pepper to taste. Remove from heat and set aside.
5
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened. Add the ground beef (or turkey) to the pot. Cook, breaking it up with a spoon, until it is browned and cooked through.
6
Stir in the crushed tomatoes, tomato paste, and red wine (if using). Add the dried oregano and dried basil. Season with salt and pepper to taste. Bring the sauce to a simmer, then reduce the heat to low. Let it simmer gently for 20-30 minutes, stirring occasionally, to allow the flavors to meld.
7
Divide the prepared zoodles among serving plates. Top each plate of zoodles with a generous portion of bolognese sauce. Garnish with fresh basil and grated Parmesan cheese, if desired. Serve immediately and enjoy your healthy, delicious meal!
