Yogurt Marinated Grilled Chicken Breast with Sautéed Brussel Sprouts and Roasted Vegetables

This delicious dinner is so easy to make anytime of the week. If you’ve never roasted your vegetables in the oven, this is a must do to elevate your dinners to a new level!

Ingredients

4 chicken breasts
1 cup yogurt
1 tbsp southwestern fajita seasoning
4 cups shredded brussel sprouts
1 bunch green beans, chopped
1 small onion, chopped
8 cups assorted chopped vegetables
1 tbsp steak seasoning
Cooking oil
Salt and pepper to taste

Instructions

In a large bowl add the chicken breasts, yogurt and the fajita seasoning mixing everything together. Cover and refrigerate for a couple of hours in the refrigerator.

Heat a large pan on the stove and add enough cooking oil to lightly coat the bottom of the pan. Saute the shredded Brussels sprouts, chopped green onions and the chopped onion for about 8 minutes or until everything is tender. Salt and pepper to taste.

Add the assorted vegetables to a baking sheet and drizzle with enough cooking oil to lightly coat them.

Sprinkle the vegetables with the steak seasoning and mix to coat with the cooking oil and steak seasonings. Roast in a 350 degree oven for about 20 minutes or until they are tender.

Grill the marinated chicken breasts until they are fully cooked through (165 degree’s internally).

Serve everything together for a delicious dinner.
