Willis Ranch Recipes

What a wonderful treat to be invited to a working ranch and enjoy so cowboy cooking food. I definitely learned from a pro how to put together and amazing dinner for a ranch or dinner party!

Ingredients

For the Try-Tip: 1 tri-tip roast
Favorite spice rub
Cooking spray
Dutch Oven Potatoes: 1 pound bacon, chopped
2 onions, chopped
10 medium potatoes, sliced
1 can 7-Up
4 cups shredded cheddar cheese
Salt and Pepper to taste
For Linda's Baked Beans: 1 pound hamburger, cooked
1 pound bacon, cooked and chopped
1 large onion, chopped and sautéed
1/2 cup white sugar
1/2 cup white sugar
1/2 cup brown sugar
1 cup ketchup
2 tbsp red wine vinegar
1 tbsp mustard
3 cans various beans (pork-n-beans, kinda, pinto, lima, black beans…)
4 cups little smokies
Salt and pepper to taste
For Trudy's Strawberry Cream Pie: For the Filling: 1 can Sweetened Condensed Milk
1/3 cup Lemon Juice
1 cup Whipping Cream
1 pkg. Strawberry Danish Dessert
½ cup Sugar
1 ¾ cup water

Instructions

For the tri-tip roast: Lightly oil Tri-Tip roast.

Generously rub Spade-L-Ranch beef marinate and seasoning into Tri-Tip roast.

Let meat marinate for 3-4 hours or overnight in the refrigerator.

Sear on hot grill. Turning and searing all sides.

Reduce heat and grill on medium heat at 325 degrees for approximately 45 minutes.

Check with a meat thermometer for desired doneness: 140 degrees for rare 150 degrees for medium 160 degrees for well-done

Remove from grill. Let rest. Start with small end of roast and carve into thin slices about ¼ inch thick. Tri-Tip must be carved cross grain of roast and should look like a honey comb. Depending on size a roast should feed 8-10 people. Serve and Enjoy! Delicious!

Cook cut up bacon and onions in Dutch Oven.

Put sliced potatoes in Dutch Oven layered with salt and pepper. Check occasionally and stir.

If the potatoes become dry add 7up. Remember to pour into center of Dutch Oven and not on the side so that Dutch Oven will not crack. Continue cooking until potatoes are tender.

When done remove from bottom coals. Add cheese, replace lid for 3-5 minutes for the cheese to melt.

For the Linda's baked beans: Add everything into the pot, stir to combine and simmer for about 30 minutes. Adjust salt and pepper if needed.

For Trudy's Strawberry Cream Pie: Use 2 prepared 9-inch pie crusts.

To prepare the filling: In a bowl place sweetened condensed milk, lemon juice, and stir until thick. Whip cream until stiff and fold into mixture.

Pour into a cooled pie crust. Refrigerate. When set add fruit topping.

For the pie topping: Combine 1 pkg. Strawberry Danish Dessert, sugar, and water. Stir and boil until thickened. 2-3 minutes. Cool.

Add sliced fresh strawberries. Stir lightly and place on top of cream filling. Serve plain or with whipped cream on top.
