Watermelon Salad and Smoothie
Need a refreshing summer salad or smoothie? Watermelon is a perfect choice for both. Serve with your favorite bbq or as a cold beverage on the patio.

Ingredients
Watermelon Smoothie:
8 cups diced watermelon
1/2 cup olive oil
1/4 cup rice vinegar
1 bunch mint, chopped
zest of one lemon
Watermelon Smoothie:
8 cups chopped seedless water melon
zest of one lemon
Instructions

For the watermelon salad, add the watermelon to a large bowl and set aside.

In a separate bowl add the olive oil, rice vinegar, mint and lemon zest. Whisk everything together until combined.

Pour the dressing over the watermelon and gently fold everything together. Chill and serve.

For the watermelon smoothie, add everything into a blender and blend until smooth. If desired, add ice and blend to create a slushy.
