Walnut Date Cheesecake
Cheesecake is so easy to make but you have to keep in mind a cheesecake is really a custard. This cheesecake is topped with walnuts and chopped dates. I like to sprinkle chopped almonds on top too.
Ingredients
3-4 cups finely crush graham crackers or flavorful biscuits
6-8 tbsp melted butter
1 can sweet and condensed milk ( 14 oz can )
1 pkg cream cheese ( 8 oz )
2 eggs
2 tsp vanilla
1 cup walnuts
1 cup chopped almonds (optional)
1 cup chopped dates, seed removed

Mix the crushed graham crackers or biscuits together with the melted butter and press them down to form the bottom crust in a 9-10 inch spring form pan.

In your food processor, combine the sweet and condensed milk, cream cheese, eggs and vanilla. Blend everything together until smooth and well incorporated. If needed, scrape down the bowl making sure everything is incorporated.

Pour the mixture into the spring form pan and sprinkle the top with the walnuts and dates. I like to sprinkle with chopped almonds too.

Preheat your oven to 300 degrees and place a cake dish on the bottom shelf of the oven. Fill it half way with hot water and place the cheesecake on the rack above it. Loosely tend the cheese cake with aluminum foil and bake for approximately 45 minutes or until the cheesecake has set.

Remove from the oven allow to cool completely and cover with plastic wrap. Refrigerate over night and serve the next day with caramel drizzled over it.
