Vietnamese Pho Ga
Delicious pho is a favorite of mine. It warms you up on a cold night!
Ingredients
For the Stock:
8 cup high quality chicken stock
2 chicken breasts, cut into bite size pieces
1/4 cup coarsely chopped fresh ginger
1/4 cup coarsely chopped daikon radish (Optional)
1/4 cup coarsely chopped parsley
1 medium yellow onion coarsely chopped
2 whole cloves
4 bay leaves
Cooked Rice Noodles
1 bunch fresh cilantro
1 bunch fresh mint
2 cups fresh bean sprouts
1 bunch fresh basil
2 limes cut into wedges
Chili Garlic Sauce
Fish Sauce
salt and pepper to taste

In a large stock pot combine the chicken stock, fresh ginger, daikon radish, parsley, onion, cloves, bay leaves and chopped chicken. all of the stock ingredients and simmer for 45 minutes. Strain stock and reserve the chicken breasts and stock. Discard other ingredients.

Cook rice vermicelli noodles as directed on the package. Portion out between four bowls.

Ladle hot stock and chopped chicken breasts between the four bowls.

To garnish, divided the cilantro, mint, bean sprouts, basil, lime wedges, chili sauce and fish sauce between the 4 prepared bowls.
