Ingredients
For the Lemongrass Pork:
1 lb pork tenderloin, thinly sliced
2 stalks lemongrass (white part only), finely minced
2 cloves garlic, minced
1 tbsp brown sugar
2 tbsp fish sauce
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp vegetable oil
½ tsp black pepper
For the Bowl:
8 oz rice vermicelli noodles
1 cup shredded carrots
1 cup cucumber, julienned
½ cup chopped cilantro
½ cup chopped mint
½ cup chopped peanuts (optional)
Quick Lime Dressing:
3 tbsp lime juice
1 tbsp fish sauce
1 tbsp sugar
1 clove garlic, grated
1 tbsp water
Instructions

In a bowl, combine lemongrass, garlic, brown sugar, fish sauce, soy sauce, lime juice, oil, and pepper. Add pork slices and marinate for 20–30 minutes.
