Vegetable Stir Fry with Rice
This vegetable stir fry is an easy dinner idea. It can be made with any vegetables you have in the fridge. If you need a gluten free idea, make sure the soy sauce and vegetable sauce is gluten free. Serve over you favorite rice and enjoy!
Ingredients
6 cups assorted stir fry vegetables
1/3 cup vegetable stock
1/4 cup soy sauce
1 tbsp cornstarch
2 tsp sesame seed oil
2 tbsp toasted sesame seeds
4 cups cooked rice
Olive oil
Instructions

For the vegetables, I used celery, onions, carrots, water chestnuts, baby corn, mushrooms and bell peppers. You can use any vegetable you want too. Cut them into bite size pieces.

Heat a large pan on the stove and add enough olive oil to lightly coat the bottom of the pan. Add the vegetables and sauté for about 5 minutes or until al-dente.

While the vegetables are cooking, whisk the vegetable stock, soy sauce, cornstarch, sesame oil and toasted sesame seeds together to combine.

Add the vegetable stock mixture to the vegetable, stir to coat the vegetables with the sauce as it thickens.

Serve the stir fried vegetables over cooked rice and enjoy!
