Vegetable Ragu
Whether you have leftover vegetables from a party or not, this vegetable ragu is a wonderful sauce to make for you pasta. Easy to make and delicious, this dinner idea is a must!
Ingredients
1 cup chopped cauliflower
1 cup chopped broccoli
1 cup chopped celery
1 cup chopped tomatoes
1 cup chopped onion
1 cup chopped summer squash
1 cup chopped butternut squash
1 can Italian style tomato paste (6 oz can)
6 cups water
Salt and pepper to taste
Olive oil
1 pkg Orecchiette pasta (12 oz pkg)
Instructions

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pot.

Add the cauliflower, broccoli, celery, tomatoes, onion, summer squash, butternut squash, tomato paste.

Sauté the vegetables together with the tomato paste for about 3 minutes. Add the water, while stirring bring to a boil, reduce heat and simmer for 30 minutes.

Cook the pasta as directed on the package, strain and add the pasta to the vegetable ragu.

Stir to combine the ragu and pasta. Serve and Enjoy with your favorite artisan bread.
