Vanilla Pecan Divinity

Vanilla Pecan Divinity

This delicious candy is really easy to make. The key is making sure your bowl that is used to whip your egg whites in is free from any fat residues. Be sure to clean it thoroughly with soap and water.

Ingredients

2 2/3 cups sugar
1/2 cup corn syrup
1/2 cup water
2 egg whites
1 tbsp vanilla
1 cup toasted chopped pecans

Instructions

Add the sugar, corn syrup and water to a large sauce pan. I prefer using a stainless pan over a non-stick sauce pan.

While gently stiring to combine everything together, bring the sugar solution to a boil and boil to a firm ball stage (about 240 degree's F).

While the sugar solution is cooking, whisk the egg whites and vanilla to stiff peaks.

Once the sugar solution reaches firm ball stage, remove from the stove and turn the mixer on high. Drizzle the hot sugar solution into the whipped egg whites while the machine is running and continue drizzling until all the sugar solution is poured into the whipping egg whites. Continue whipping for a good 5 minutes or until the mixing bowl has cooled enough to the touch and the divinity is starting to hold shape while whisking.

Add the toasted chopped pecans to the divinity and mix in.

Spoon the divinity onto a prepared parchment (sprayed with vegetable spray) with a large spoon. I was able to spoon about 20 large pieces of divinity onto a parchment sheet with this recipe. That amount will change based on how big or small your divinity pieces are. Move quickly while the divinity is still warm.

Let the divinity completely cool and set for a couple of hours, serve and enjoy!

If the divinity spreads no problem, it's simply too hot. Continue whipping it until it's cool enough to hold its shape while spooning it. If it still spreads, the sugar solution was boiled long enough to firm ball stage.
