Perfect for lunch or a light dinner, this sandwich is both nutritious and satisfying. Let’s dive into this mouthwatering recipe that’s sure to become a household favorite!

Ingredients

4 large Oakdell eggs
1 cup garbanzo beans (chickpeas), drained, rinsed and smashed
1/4 cup walnuts, chopped
1/3 cup Best Foods Mayonnaise
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
1 tbsp Dijon mustard
Salt and pepper to taste
4 slices of your favorite bread
4 slices of cheese (cheddar or your choice)
1 large tomato, sliced
1/2 cup alfalfa sprouts

Instructions

Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat and let sit for 12 minutes. Drain and cool under cold running water. Peel and chop the eggs.

In a large bowl, combine the chopped eggs, smashed garbanzo beans, finely diced walnuts, celery, and red onion.

Stir in the Best Foods Mayonnaise and Dijon mustard. Season with salt and pepper to taste. Mix until well combined.

Place a slice of cheese on each slice of bread. Spoon a generous amount of the egg salad mixture onto two of the bread slices.

Top the egg salad with tomato slices and alfalfa sprouts.

Place the remaining bread slices on top, cheese side down, to complete the sandwiches.
