Twiced Baked Potatoes
These take a little extra time than a regular baked potato but so worth it. I like adding cream cheese, butter and cream to whip this up to perfection. If you need and want a little extra punch to your regular dinner these twice baked potatoes are perfect.
Ingredients
6-8 Russet potatoes
1 pkg cream cheese
8 tbsp butter
1/2 cup cream
2 cups shredded cheese
1 bunch chopped green onions
Steak seasoning to taste
Instructions

Bake the russet potatoes in the oven until they are fork tender. Remove from oven and let them cool completely.

Cut the potatoes in half and hollow out the potato, leaving enough to create a potato “boat”.

Place the scooped out potato portions in a large bowl and add the cream cheese, butter and shredded cheese. Using your beaters, whip the potatoes until everything is combined. Mix in the steak seasoning to taste.

Spoon the mixture back into the potato “boats” and place them on a baking sheet to go back into a 350 degree oven for about 10 additional minutes to melt the cheese.

Remove from the oven, sprinkle with freshly chopped chive, green onions, onions or your favorite topping. Serve with your favorite dinner.
