Turkey Noodle Soup
Whether you have left over turkey or chicken this soup is a great way to use them up.
Ingredients
1 large onion, chopped
4-5 celery stalks, sliced
2 cups baby carrots, chopped
3-4 cups chopped cooked turkey
6-8 cups turkey or chicken stock
1 package egg noodles, 16 oz pkg
Olive oil
Instructions

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the chopped onion, celery and carrots sautéing for about 2 minutes.

Add the chopped cooked turkey (can use chicken) and saute for 1 minute.

Add the turkey or chicken stock, season as needed with salt and pepper and bring to a boil. Add the egg noodles, reduce the heat and simmer for 8-10 minutes to cook the noodles.

Serve with your favorite roll and enjoy!
