
Turkey Cranberry Empanadas
These delicious turkey cranberry empanadas are a great way to use Thanksgiving leftovers. Use your favorite ingredients to create the filling to create your customized Thanksgiving leftover empanadas!

Ingredients
For the Dough:
3 cups flour
1 cup cold butter
1 tsp salt
1 cup cold water
For the Filling:
2 cups chopped turkey
1/2 cup fresh cranberry sauce
1 cup chopped mushrooms
1/3 cup finely chopped onion
Instructions

To make the dough, combine the flour, cold butter and salt in your food processor with the blade.

Pulse to cut the fat into the flour. Remove the flour mixture and transfer to a large bowl. Add the cold water to the flour mixture and mix everything together into a soft dough, set aside.

In a large bowl, add the chopped turkey, fresh cranberry sauce, chopped mushrooms and onion. Mix everything together and set aside. Salt and pepper as needed.

Divide the dough in half. On a floured work surface, roll the dough out to about 1/4 inch thick. Cut the dough into 4-5 inch rounds using a large cookie cutter.

Into the center of each round, place a tablespoon (more or less) of the turkey filling. Fold the dough over on itself and seal the edges, creating a half circle. Set aside until ready to fry.

Preheat the oil to 375 degree’s. Deep fry the prepared turkey cranberry empanadas until they are golden brown. Serve with freshly prepared salsa and enjoy!
