Turkey and Wild Rice Loaf
Are looking for an alternative to meatloaf? Here’s a great idea using turkey. Thanks to my friends from The American Heart Association for sharing this heart healthy turkey loaf with all of us.
Ingredients
For the Sauce:
1/2 cup fat-free sour cream
1 tbsp bottle white horseradish, drained
1/4 tsp pepper
For the Turkey Loaf:
1 large egg white
2 tbsp fat-free milk
1 lb. ground, skinless turkey breast
1 cup cooked wild rice
1/2 cup shredded carrot
1/4 cup chopped green onions
1/4 cup chopped, fresh parsley
2 medium garlic cloves, minced
1/2 tsp dry mustard
1/4 tsp pepper
Cooking spray

Preheat your oven to 350 degrees.

To make the sauce: In a small bowl, combine the sour cream, horseradish and pepper mix until combined. Set aside until ready to use.

To make the turkey and wild rice loaf: Combine all the turkey loaf ingredients together in a large bowl and mix together.

Spray a loaf pan with cooking spray and place the turkey mixture into the loaf pan (shaping if necessary).

Place the turkey loaf into the oven and bake for about 1 hour or until the internal temperature is at least 165 degree’s.

Remove from the oven and serve with the sour cream sauce. Enjoy!
