Tostadas
Tostados are a quick and easy dinner idea that can come together in a matter of minutes. Just think of them as flat tacos and pile on your favorite taco toppings and enjoy!
Ingredients
4-6 tostadas
1 pound hamburger
2 cups refried beans
1 tbsp Mexican seasoning (I use Tajin)
4 tomatoes, chopped
1/2 cup finely chopped onion
1 cucumber, peeled and chopped
1 bunch cilantro, chopped
1 cup prepared salsa
2 cups chopped lettuce
2 cups fresh queso fresco cheese, crumbled

You can make your own tostadas by lightly spraying corn tortillas and baking them in the oven until they are crispy.

Heat a large saute pan and add enough oil to lightly coat the bottom of the pan. Add the hamburger (or meat of choice) and fully cook. Add the refried beans and Mexican seasoning and stir to combine and heat through.

In a large bowl, combine the chopped tomatoes, chopped onion, chopped cucumber, chopped cilantro and prepared salsa and mix together.

To assemble the tostadas, spread about 1/2 cup of the re-fried bean mixture on a tostado followed by the salsa mixture, handful of shredded lettuce and crumbled queso fresco. Serve and Enjoy!
