Tomato Soup with Grilled Cheese Dippers

Ingredients
10 medium size Roma tomatoes
2 chicken bullion cubes
1/2 medium onion
2 garlic cloves
1 small can tomato paste (about 1/2 cup)
Salt and pepper to taste
For the Grilled Cheese:
8 slices soft white bread
12 slices American cheese
Vegetable spray
Instructions

Wash and quarter the tomatoes and add them to the blender along with the bullions cubes, onion, garlic, tomato paste, salt and pepper (as needed).

Puree all the tomato soup ingredients together and pour into a large sauce pan, bring to a boil, reduce the heat and simmer for about 10 minutes. If desired, add 1 cup of cream to the soup.

To make the grilled cheese sandwich dippers, place four slices of soft white bread on your work surface and place three slices of American cheese on each slice of bread. Place the other slice on bread on top to create a sandwich.

Spray both sides of the sandwich with vegetable spray and place the sandwiches on a griddle and grill each side of the sandwich until they are golden brown.

Slice the each sandwich into 4 slices to create the dippers.

Serve the fresh tomato soup with the grilled cheese dippers
