Toasted Coconut Marshmallow Chocolate Chip Cookies
Oh my DELICIOUSNESS! I don’t know what else to say about these amazing toasted coconut marshmallow chocolate chip cookies!
Ingredients
1 pound butter, room temperature
2 cups brown sugar
1 ½ cups sugar
3 eggs
1 tsp salt
1 tbsp baking soda
2 tbsp vanilla
1 package semi sweet chocolate chips (about 3 cups)
6 cups flour
1 ½ cup chopped walnuts (optional)
1 jar marshmallow creme (13 oz jar)
1 1/2 cups toasted coconut (macaroon style coconut)
Instructions

To Make the chocolate chip cookies: Cream together butter and sugars for about 3 minutes.

Add the eggs one at a time and completely incorporate the egg before adding the next one.

Add the salt, baking soda, and vanilla and blend into batter. Be sure to scrape the sides of the bowl to incorporate all of the ingredients.

Add the flour and blend.

Lastly, add the chocolate chips and blend into the batter.

Drop desired cookie dough size onto a prepared baking sheet. I fit about a dozen per baking sheet.

Bake in a preheated 350 degree oven for about 11 minutes or until desired color is reached.

Remove the cookies from the oven and let them cool completely.

Spread about 2 tbsp of marshmallow cream on top of the cookie and dip them in the toasted coconut bits.

Let the marshmallow set, serve and enjoy.
