Thanksgiving Potato Croquettes

Thanksgiving Leftover Potato Croquettes

Creating new dishes from leftovers is one of the funnest things I do. Like all of you, I get tired of leftovers and try to recreate and repurpose them into new and delicious meals. Be creative and have fun with different spice blends and flavors in creating your potato croquettes.

Ingredients

4 cups mashed potatoes
2 cups chopped, cooked turkey
2 cups prepared stuffing
1 cup prepared cranberry sauce
1 tsp season all salt
2 tsp black pepper
2 eggs
4 cups bread crumbs
8 cup cooking oil

Instructions

In a large bowl, combine the mashed potatoes, chopped turkey, stuffing, cranberry sauce, salt and pepper. Mix everything together to combine and sent aside.

In a small bowl, whisk the eggs together and set aside.

Add the bread crumbs to a large bowl and set aside.

Add the oil to a deep pan and heat to 365-75 degree’s Fahrenheit.

To form the croquettes, remove 1/2 cup of the mixture and shape into a ball. Flatten the ball to about 1/2 inch thick. Dip in the prepared egg and dredge in the bread crumbs. Set aside on a parchment line baking sheet. Repeat until all the croquettes are prepared. Refrigerate if not ready to fry them up and serve.

Once the oil is to temperature, carefully lower the prepared croquettes into the oil and fry for about 2 minutes on each side or until golden brown. Remove and place on a paper towel line plate to absorb any excess oil. Serve with your favorite dipping sauce. On air, I used 1/2 cup Tonkatsu Sauce (Asian vegetable and fruit sauce) and 1/2 cup prepared cranberry sauce mixed together. Enjoy!

    Hello Chef Bryan,

    I had your show on this morning and decided to follow along and use my Thanksgiving leftovers for this recipe. It went great! My husband loved them and grabbed some immediately for his lunch tomorrow. I had to refrain from eating them all! Thank you for the fantastic recipe and easy to follow instructions along with all the necessary details.
