Thai Chicken Broccoli Salad with Peanut Dressing
As tasty heart healthy salad idea from my friends at the American Heart Association that’s easy to make. This salad is perfect for a luncheon or quick dinner idea, use a rotisserie chicken to further simplify this dinner.
Ingredients
Peanut Dressing:
2 tbsp no salt added natural peanut butter
2 tsp low sodium soy sauce
1 tbsp fresh lemon juice
Water, as needed to thin dressing
For the Salad:
2 cup freshly chopped broccoli
2 cups cooked and chopped chicken breast
2 cups fresh sweet peas, trimmed
1 - 11 oz canned mandarin orange slices
3-4 stalks green onion, chopped
Instructions

In a small bowl, add peanut butter, soy sauce, and lemon juice.

Add enough water to make the dressing thinner, about 2 to 3 tablespoons of water. Use a fork or a whisk to combine dressing.

To make the chicken and broccoli salad. add broccoli, cooked chicken, peas, mandarin orange and chopped onion into a large bowl.

Add dressing to salad, tossing to combine.
