Tangy Sweet and Sour Pork Fried Rice

Ingredients

For the Pork: 1/2 lb pork loin, trimmed and cut into bite-sized pieces
1/4 cup reduced-sodium soy sauce
2 tbsp rice vinegar
1 tbsp honey
1 tbsp ketchup
1/2 tsp garlic powder
1/4 tsp ground ginger
For the Rice: 2 cups cooked brown rice, cooled
1 cup mixed vegetables (carrots, peas, bell peppers)
1/2 cup pineapple chunks (optional)
2 tbsp reduced-sodium soy sauce
1 tbsp olive oil
2 large eggs, beaten
2 green onions, chopped
1 clove garlic, minced
1/4 tsp red pepper flakes (optional)

Instructions

Marinate the Pork: In a bowl, whisk together soy sauce, rice vinegar, honey, ketchup, garlic powder, and ground ginger. Add pork pieces and marinate for at least 15 minutes.

Cook the Pork: Heat a large skillet or wok over medium-high heat. Add the marinated pork and cook for 4-5 minutes until browned and cooked through. Remove from skillet and set aside.

Prepare the Rice: In the same skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the mixed vegetables and cook for 3-4 minutes until tender.

Scramble the Eggs: Push the vegetables to one side of the skillet. Pour in the beaten eggs on the other side and scramble until cooked. Mix eggs with the vegetables.

Combine and Stir-Fry: Add the cooked rice, pineapple chunks, and pork back to the skillet. Pour in the soy sauce and stir-fry for another 2-3 minutes, until everything is heated through and well combined.

Finish and Serve: Sprinkle with chopped green onions and red pepper flakes if desired. Serve hot and enjoy!
