Taco Soup
This is a go to favorite of mine. If you haven’t tried putting homemade tater tots into the soup you must do it! Here’s the link for the tater tots
Ingredients
1 medium onion, chopped
1 can chili beans
1 can black beans
1 can whole kernel corn
1 can tomato paste
2 cans diced tomatoes
2 bell peppers, chopped (optional)
2 chicken bullion cubes
1 pkg salt-free taco seasoning mix
2 whole skinless, boneless chicken breasts
shredded cheese (optional)
sour cream (optional)
Tortilla chips
Salt and pepper
Olive oil
Instructions

Heat a large pot on the stove and add just enough olive oil to lightly coat the bottom of the pan.

Cut the chicken into bite sized pieces and sauté until nicely browned in the hot pot.

Add the chopped onion and sauté for an additional 2 minutes.

Add the chili beans, black beans, corn, tomato paste, diced tomatoes, bell peppers and spices. Be sure to add all the liquid from the canned ingredients. Bring to a boil and reduce to a simmer. Simmer for 30 minutes or until the chicken is fully cooked. Taste and adjust salt and pepper as needed.

Fill a soup bowl with tortillas chips and ladle soup over them. I also like to serve with my homemade tater tots (recipe link in the description above). Finish off with a dollop of sour cream and chopped cilantro if desired. Enjoy!
