Ingredients

1 lb ground beef or turkey
1 small onion, diced
2 cloves garlic, minced
- 1 packet taco seasoning or 2 tbsp Chef Bryan's homemade taco seasoning
1 can (10 oz) diced tomatoes with green chilies
1 cup corn (canned or frozen)
1 cup black beans, drained and rinsed
2 cups beef or chicken broth
1 1/2 cups uncooked pasta (small shapes like shells or elbows work well)
1 cup shredded cheddar cheese
Salt and pepper to taste
Optional toppings: sour cream, chopped cilantro, diced avocado, sliced jalapeños

Instructions

1
In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
2
Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is soft.
3
Stir in the taco seasoning, making sure to coat the meat and onions well.
4
Add the diced tomatoes with green chilies, corn, black beans, beef or chicken broth, and uncooked pasta to the skillet. Stir to combine.
5
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 15-20 minutes, or until the pasta is cooked and most of the liquid is absorbed.
6
Stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
7
Serve hot, topped with your favorite optional toppings like sour cream, chopped cilantro, diced avocado, and sliced jalapeños.
