Sweet Thai Chili Chicken Bowl
This yummy Thai chili chicken bowl is both sweet and tangy. Topped with sliced cooked chicken and so many other toppings, it’s a win for dinner. Finish off with a sweet and savory chili dressing for a delicious treat!
Ingredients
For the Dressing:
1/3 cup chili sauce
1/4 cup rice vinegar
1/3 cup coconut milk
1/3 cup brown sugar
1 tbsp minced garlic
1 tbsp freshly grated ginger
1/4 cup smooth peanut butter
1/4 cup soy sauce
1 lime, juiced
For the chicken bowl:
4-6 boneless chicken thighs grilled and chopped
4 cups cooked quinoa
2 cups bean sprouts
1 cup shredded carrots
1 cup pineapple tidbits
1 red bell pepper, thinly sliced
1 cup shredded red cabbage
1/4 cup sesame seeds, garnish
1/4 cup sliced green onions, garnish
1/4 cup chopped cilantro, garnish

To make the dressing, combine the dressing ingredients into a large bowl and whisk together until combined. Salt and pepper to taste.

To assemble the chicken bowls, divide the cooked quinoa between 4-6 bowls. Divide and top the bowls with the chicken, sprout, carrots, pineapple, bell pepper, red cabbage and garnish with sesame seeds, sliced onions and chopped cilantro. Drizzle with the freshly made sweet Thai chili dressing, serve and enjoy!
