Sweet Sticky Rice with Mango
Whenever I go out to east at one of my favorite Asian restaurants, I MUST order sweet sticky rice with fresh mango for dessert. It’s not overly heavy and finishes off my delicious Asian cuisine perfectly!
Ingredients
For the Coconut Sauce:
2 cups coconut milk
1/2 cup sugar
1/2 tsp salt
1 tbsp rice flour
For the Sweet Sticky Rice:
3 cups coconut milk
3/4 cup sugar
1/2 tsp salt
4 cups cooked sticky rice
3-4 ripe mangoes
Instructions
1
To make the sauce, add the 2 cups coconut milk, sugar, salt and rice flour into a sauce pan. Use a whisk to combine everything together. Bring to a boil while gently stirring and let the mixture thicken. Remove from the stove and set aside.
2
To make the sweet sticky rice, add the coconut milk, sugar and salt to a large sauté pan and bring to a boil while gently stirring. Add the cooked sticky rice and gently break it up and stir it into the coconut milk. cover with a lid and let it sit for about 20 minutes so the rice absorbs the coconut milk mixture.
3
While the rice is finishing up, peel and slice up some fresh mango to serve on the side.
4
To serve, place a large spoonful of the sweet sticky rice on the plat with some fresh mango on the side. Drizzle with the coconut sauce, serve and enjoy!
