Sweet Potato Gnocchi with Parmesan Cream Sauce and Crispy Bacon
Transform sweet potatoes into pillowy gnocchi paired with a rich Parmesan cream sauce and crispy bacon. This comforting dish is perfect for an indulgent homemade dinner.
Ingredients
1 medium sweet potato
1 ½ cups all-purpose flour
1 cup heavy cream
1 cup grated Parmesan cheese
6 slices of bacon

Cook the Sweet Potato in the Microwave: Pierce the sweet potato several times with a fork. Place it on a microwave-safe plate and microwave on high for 5–7 minutes, flipping halfway through, until fork-tender. Let it cool slightly, then peel and mash in a food processor until smooth.

Make the Dough: Combine the mashed sweet potatoes with flour, mixing until a soft dough forms. Roll the dough into a disk and cut into gnocchi-sized pieces with scissors or a knife.

Cook the Gnocchi: Boil salted water in a large pot. Cook the gnocchi in batches until they float to the surface (about 2-3 minutes). Remove with a slotted spoon and set aside.

Prepare the Sauce: Heat the heavy cream in a saucepan over medium-low heat. Add salt, pepper, and Parmesan cheese. Stir until the cheese melts and the sauce thickens. Add the cooked gnocchi, gently stirring to coat.

Make Crispy Bacon: Lay the bacon slices on a baking tray. Bake in the oven at 360°F for 10 minutes or until crispy. Break into pieces.
