Sweet and Sour Pork Stir-Fry
This is one of the best sweet and sour pork stir-fry you’ll ever make. Not only is it easy it’s delicious!
Ingredients
4 boneless pork loin chops, cut into bitesize pieces
1 tbsp granulated garlic
1 tsp salt
2 tbsp flour
1/4 cup cornstarch, plus another 1/4 cup
2-3 tbsp soy sauce
1 egg
1-2 cups freshly chopped pineapple
3 bell pepper, chopped (use multiple colors)
1 small red onion, sliced
1/4 cup ketchup
1/4 cup brown sugar
1/4 cup rice vinegar
1-2 tbsp water
2 tsp corn starch
Oil for frying
Salt and pepper to taste

Place the cut up pork pieces in a large bowl and sprinkle with the granulated garlic, salt, flour and cornstarch mixing everything together to combine. Pour the soy sauce and crack the egg over the pork, mixing everything together to combine. Let sit for about 20 minutes.

Sprinkle the additional quarter cup of cornstarch on a plate and coat the pork pieces with the additional cornstarch and deep fry the pork pieces for about 5 minutes. Remove from the deep fryer and set aside.

In another large bowl add all of the chopped peppers and pineapple, mixing together to combine all.

In a small bowl mix the ketchup, brown sugar, rice vinegar and the 2 tsp cornstarch together to combine, set aside.

Heat your wok on the stove and add enough cooking oil to coat the wok. Stir fry the vegetables for a couple of minutes, remove and set aside.

Add the ketchup mixture, stirring and bring to a boil to activate the starch to thicken the sauce. Add the prepared pork and stir fried vegetables to the wok and sauce. Stir to coat everything with the sauce. Serve over rice and enjoy.
