Sweet and Sour Pork
This easy to make sweet and sour pork is a delicious idea for dinner!
Ingredients
4 cups cooked riced
1-2 pound pork tenderloin cut into inch cubes
1 small yellow onion, thinly sliced
1 green pepper, sliced into strips
1 red bell pepper, sliced into strips
1 20 ounce can pineapple chunks
2 tbsp rice vinegar
2 tbsp soy sauce
1/4 cup brown sugar
2 tbsp cornstarch
2 tbsp water
salt and pepper to taste
vegetable oil
Instructions

Heat a large skillet on the stove and add just enough oil to lightly coat the bottom of the pan.

Add the pork and sauté for 5-8 minutes or until pork is cooked through. Remove the pork and set aside.

To the sauté pan, pineapple chunks and juice, onion, bell peppers, vinegar, soy sauce, brown sugar and cornstarch. Mix everything together and bring to a boil and reduce the heat to a simmer. Simmer for about 5 minutes.

Add the cooked pork back into the sauté pan with the sweet and sour sauce. Stir to incorporate and cook and additional minute.

Serve the sweet and sour pork over rice and enjoy!
