
Sweet and Sour Cauliflower
This delicious plant based sweet and sour dish will make your taste buds happy! I serve this with rice on the side, but you can serve your favorite side dish to complete this wonderful cauliflower dish.

Ingredients
1 head cauliflower, cut into florets
1/3 cup soy sauce
1/4 cup honey
1/4 cup rice vinegar
1 tbsp minced garlic
2 tsp toasted sesame seed oil
1 tsp ginger
1 1/2 tbsp corn starch
1/4 cup water
Sesame seeds and fresh chives for garnish

Preheat your oven to 400 degree’s.

Cut the cauliflower in manageable florets and place them on a a baking sheet you’ve sprayed with vegetable oil

Place them in the oven and roast for about 15 minutes (7.5 minutes on each side, roughly) or until they are lightly caramelized in color.

While the cauliflower is roasting, to a sauce pan add the soy sauce, honey, rice vinegar, minced garlic, toasted sesame sell oil, ginger, cornstarch and water. Whisk everything together to incorporate the corn starch.

Bring the sauce to a boil while lightly stirring it, reduce heat to a simmer and continue cooking for 2-3 minutes. The sauce should thicken up, remove from the heat and set aside.

When the cauliflower are roasted, remove from the oven and transfer them to a large bowl. Pour the sauce over the roasted cauliflower and toss to coat. I like to serve this with rice on the side and garnish with toasted sesame seeds and freshly chopped chives. Enjoy!
