Summertime Chicken Fajitas
These summertime chicken fajitas are a delicious idea for dinner. Go see what’s ripe in the garden and add it to these wonderful fajitas.
Ingredients
2 chicken breasts, cut into strips
1 small zucchini, julienne cut
4 carrots, peeled and julienned cut
1 small onion, sliced
1 red bell pepper, sliced
2 roma tomatoes, sliced
Fajita Seasoning
Flour tortillas
Chips and Salsa
Instructions

Heat a large skillet on the stove and add just enough olive oil to lightly coat the bottom of the pan. Sauté the chicken breast strips until they are fully cooked and remove them from the pan.

Add the sliced vegetables to the skillet and sauté for about 5 minutes or until they are al-dente. Add the cooked chicken back to the sautéed vegetables and season with fajita seasoning.

Warm the flour tortillas and serve the fajitas with fresh salsa, chips or any side condiment you choose. Enjoy!
