Ingredients

2 pounds lean ground beef
1 small onion
2 tbsp minced garlic
1 tbsp freshly chopped rosemary
2 tsp dried oregano
2 cups Greek yogurt
1/2 cup grated cucumber, drained
1-2 tbsp freshly chopped dill
1 tbsp freshly minced garlic
1 tbsp fresh lemon juice (optional)
Salt, to taste, Sliced tomatoes, Sliced red onion, Feta cheese,Pita bread

Instructions

Prepare the Tzatziki Sauce by mixing Greek yogurt, grated cucumber, chopped dill, minced garlic, optional lemon juice, salt, and pepper. Refrigerate for a few hours or overnight to allow flavors to meld.

In a food processor, blend ground beef, onion, garlic, rosemary, oregano, salt, and pepper until smooth.

Transfer the beef mixture into a loaf pan and bake at 350°F for about an hour or until fully cooked (internal temperature reaches 165°F). Allow the loaf to cool, then refrigerate overnight.

Slice the chilled beef loaf and pan fry each slice until golden brown.

Assemble gyros by spreading tzatziki sauce onto warm pita bread, topping with sliced tomatoes, red onion, feta cheese, and pan-fried beef slices.
