Stuffed Peppers

Ingredients
4 bell peppers
3/4 lb ground turkey
1/2 medium onion, chopped
1/2 cup uncooked brown rice
1 14.5-oz can diced tomatoes, no salt
1 tsp minced garlic
1 tsp Italian seasoning
1/4 tsp crushed red pepper flakes
1 8-oz. can tomato sauce, no salt added

Preheat oven to 350 degrees. Cook rice according to the package instructions. While the rice is cooking, cook the ground turkey in a skillet over medium heat. Add the onion and saute until it is translucent.

Wash the bell peppers and remove the tops, seeds and membranes. Set the peppers in a 9x9 baking dish or line them up in a loaf pan so they stand upright.

In the saute pan with the cooked ground turkey add the remaining ingredients (minus the bell peppers) and mix everything together to combine.

Spoon the mixture into the prepared bell peppers and place them in the oven for about 30 minutes or until the peppers are tenders. Serve with your favorite side dishes and enjoy!
