Street Tacos

Delicious street tacos are so fun for dinner! So many flavors, textures and colors make this culinary delight a perfect idea for a tasty treat!

Ingredients

3 strips pork belly
2 chicken breasts
3 nopales
2 cups freshly made Chef Bryan salsa verde
2 cups shredded cheddar cheese
1 cup crumbled Mexican cheese
Corn Tortillas
Fresh tortilla chips

Instructions

Fully cook the pork belly and chicken breasts (I like grilling them), chop into bite size pieces and set aside.

Prepared the nopales, by cutting the edges off of the nopales and using a knife, scrape the rest of the spines off of the cactus leaves. Once all of the spines are fully removed, grill the nopales until tender (about 3 minutes each side) and chop.

Add the chopped pork belly, chicken breasts and chopped grilled nopales to a large skillet. Add a little cooking oil and lightly sauté the mixture to warm through.

Warm a few corn tortillas and spoon the chicken mixture onto the warm corn tortilla and spoon some salsa verde and cheese to finish them off. Use your favorite hot sauce as desired.
