Strawberry Belgian Waffles

Ingredients

2 1/4 cups all-purpose flour
1 tablespoon active dry yeast
1/4 cup granulated sugar
1/2 teaspoon salt
1 3/4 cups lukewarm milk
1/2 cup unsalted butter, melted
2 eggs, separated
6-8 strawberries, hulled and washed
1 teaspoon vanilla extract

Instructions

Combine the flour, yeast, sugar, and salt in a mixing bowl.

Mix the milk, melted butter, egg yolks, and vanilla extract in a separate bowl.

Stir to thoroughly incorporate the wet and dry ingredients together.

Add the egg whites and strawberries to your food processor and run until stiff peaks are formed. Fold the egg white mixture into the batter.

Let the batter rise for 30 minutes with a clean dish towel or plastic wrap over the bowl.

Preheat your waffle maker.

If needed, spray the waffle maker with vegetable spray. Spread the batter evenly when you spoon it onto the waffle maker. Use the amount of batter specified by the waffle manufacturer.

The waffles should be cooked for 3 to 5 minutes, or until crispy and golden brown.

Serve the waffles right away with fresh strawberry compote, syrup or jam with a dollop of whipped cream.
