Zesty Steak Street Tacos with Spicy Pico de Gallo: A Flavorful Fiesta!

Ingredients

3 beef Flat Iron Steaks (about 1-1/2 pounds)
12 flour tortillas (5-inch diameter)
1 package (8 ounces) shredded Mexican cheese blend
Spicy Pico de Gallo (see below)
For the Marinade: 1/2 cup prepared Italian dressing
1/4 cup fresh lime juice
1 tablespoon honey
1-1/2 teaspoons ground cumin
1 teaspoon chile powder

Instructions

Marinate the Beef: Cut the beef into 1/4-inch strips. In a medium bowl, combine the Italian dressing, lime juice, honey, cumin, and chile powder. Pour the marinade into a food-safe plastic bag and add the beef. Seal the bag and refrigerate for at least 30 minutes, up to 2 hours.

Cook the Beef: Heat a large nonstick skillet over medium heat. Remove the beef from the marinade and discard the excess marinade. Stir-fry half of the beef for 1 to 2 minutes, or until the outside is no longer pink. Repeat with the remaining beef.

Assemble the Tacos: Warm the tortillas, then evenly divide the cooked beef among them. Top each taco with a tablespoon of Spicy Pico de Gallo and a sprinkle of Mexican cheese blend.

Make the Spicy Pico de Gallo: In a large bowl, combine 1-1/2 cups of chopped tomato, 1/2 cup of finely chopped onion, 1/4 cup of chopped fresh cilantro, and 1 tablespoon of minced jalapeño pepper. Stir in 1/4 cup of hot picante sauce or salsa, and 1 tablespoon of fresh lime juice. Cover and refrigerate for at least 1 hour to let the flavors meld.
