It’s comforting, fresh, and ready in under 45 minutes—perfect for a busy weeknight. Springtime produce like asparagus, peas, and radishes bring both flavor and color to the plate. Paired with bright lemon, fragrant thyme, and a hint of garlic, this meal delivers big taste without the meat. Ingredients

1 lb potato gnocchi (shelf-stable or fresh)

2 tbsp unsalted butter

1 tbsp olive oil

2 garlic cloves, minced

1 bunch asparagus, trimmed and cut into 1-inch pieces

1 cup fresh or frozen peas

4 radishes, thinly sliced

Zest and juice of 1 lemon

1 tsp chopped fresh thyme

1 tbsp chopped fresh parsley

1/4 tsp red pepper flakes (optional)

Salt and black pepper to taste

Grated Parmesan cheese, for garnish (optional)


Instructions

Sauté Gnocchi
: In a large nonstick skillet, heat olive oil over medium heat. Add gnocchi and cook for 5-6 minutes, stirring occasionally, until golden and crisp.

Add Spring Veggies: 
Add butter and garlic to the skillet. Stir in asparagus, peas, and radishes. Sauté for 5-7 minutes until the vegetables are tender-crisp.

Flavor with Lemon & Herbs: 
Add lemon zest, lemon juice, thyme, parsley, red pepper flakes (if using), salt, and pepper. Toss everything together and cook for 2 more minutes.

Serve & Garnish
: Remove from heat. Sprinkle with Parmesan cheese if desired and serve warm.
