Ingredients

1 tablespoon garam masala
1 teaspoon canola or corn oil
2 peeled apples (such as Fuji or Gala), chopped into 1-inch pieces
1 medium onion, chopped into 1-inch pieces
1/4 cup water, plus up to 1/2 cup additional water, divided
2 cups canned solid-pack pumpkin (not pie filling)
1 1/2 cups vegetable broth
1/4 teaspoon ground cinnamon or ground curry powder
1/2 cup milk
1/4 cup sour cream (optional)
1 tablespoon plus 1 teaspoon unsalted shelled pumpkin seeds, dry-roasted

Instructions

1
In a medium saucepan, heat oil over medium-high heat, swirling to coat the bottom. Add apples and onion; cook for 5 minutes, stirring frequently until soft.
2
Pour in 1/4 cup water, then cover and cook for 7 minutes until apples and onions are very soft, adding 2 tablespoons of water as needed to prevent sticking (do not exceed 1/4 cup).
3
Stir in pumpkin, broth, garam masala, cinnamon (or curry powder), and remaining 1/2 cup water. Increase heat to high and bring to a boil, then reduce heat and simmer, covered, for 10 minutes.
4
In batches, transfer soup to a blender or food processor and blend for 10-15 seconds until slightly chunky. Return to saucepan. You can also use an immersion blender.
5
Slowly stir in milk and heat over medium for 30 seconds until warmed through.
6
Garnish each serving with a dollop of sour cream (if using) and a sprinkle of pumpkin seeds.
