Ingredients
1 big piece of skirt steak (about the size of a big book)
1 can of diced tomatoes and mild green chiles (don't drain the juice!)
1/4 cup of lime juice
1 packet of taco seasoning
1 packet of rice pilaf mix
1 spoon of olive oil
1/4 cup of chopped cilantro
Instructions
1
Mix the tomatoes and chiles, lime juice, and taco seasoning in a dish. Put the steak in and make sure it's covered. Let it sit in the fridge for about half an hour. This makes it taste even better!
2
Cook the rice pilaf like the package says.
3
Take the steak out of the tomato mix. Heat the olive oil in a big pan.Transfer the marinade to a pan and bring to a boil for a couple of minutes. Use as an au jus style sauce over the steak when you serve.
4
Put the steak in the hot pan. Cook it for about 10 to 14 minutes, flipping it over sometimes. You want it cooked but still a little pink inside.
5
Take the steak out and let it sit for 5 minutes. Then, cut it into thin slices.
6
Put the steak on top of the rice. Spoon some of the au jus style sauce over the top and sprinkle the cilantro on top. Enjoy your speedy fiesta!
