Southwestern Chicken Salad

Southwestern Chicken Salad

This delicious southwestern chicken salad is a great idea to tackle those hot summer days.

Ingredients

For the Salad: 2 chicken breasts
2 bell peppers, thinly sliced
1 small onion, sliced
1 can black beans, drained
6 cups lettuce
2 tsp chili powder
salt and pepper to taste
For the Salsa: 1 medium onion
1 small poblano pepper
1/3 cup pickled jalapeños
6-7 cloves garlic
6 roma tomatoes
1 can diced tomatoes, drained
1 bunch cilantro
1 tsp cumin
2 tsp salt

Instructions

To make the salad, boil the chicken breasts until they are fully cooked, cool and cut into bite size pieces and place in a large bowl.

To the chicken add the thinly sliced bell peppers, onions and the black beans (drained and rinsed). Sprinkle with chili powder and toss to coat. Salt and pepper to taste, set aside.

To make the salsa, chop the onion and poblano pepper into even pieces and place them into your food processor. By chopping them into even pieces the food processor will be able to chop the pieces into even pieces. Add the pickled jalapeños and garlic cloves to the food processor as well and pulse to chop everything together.

Slice the tomatoes into small even pieces and add them to the food processor along with drained canned tomatoes. Add the cilantro to the food processor along with the cumin and salt, pulse everything together until combine and desired consistency is reached.

Remove from the food processor and set aside.

To assemble the salad, dived the greens and chicken mixture between four plates and spoon some freshly made salsa over the top. Serve and enjoy!
