Southwestern Avocado-Bell Pepper Quiche Cups

I love quiche and this is a great idea to incorporate vegetables into your brunch ideas. Try baking your favorite quiche recipe in a half shell of a bell pepper. Use any color of pepper you want and spice up your weekend brunch ideas with bell peppers.

Ingredients

4 large eggs
1/2 cup fat-free plain Greek yogurt
2 large egg whites
2 tbsp low-sodium taco seasoning
1 large avocado, peeled, pitted and diced into small pieces
1/2 cup shredded low-fat cheddar cheese
1.4-oz can diced, chopped green chilies, drained
4 medium bell peppers, halved, seeds and ribs removed

Instructions

Preheat the oven to 375 degree’s. Line a large baking sheet with aluminum foil and lightly spray with vegetable spray.

In a large bowl, whisk together the eggs, yogurt, egg whites and taco seasoning until smooth.

Gently stir in the avocado, cheddar cheese and green chilies.

Place the prepared bell peppers, skin side down on the baking sheet.

Spoon or pour the egg mixture into the bell pepper halves, filling them to just below the edges. the egg mixture will expand while baking.

Bake for 30-40 minutes or until the egg mixture is just set. Remove from the oven. Let them cool for about 5 minutes, serve and enjoy!
