Sourdough Carrot Cake with Cream Cheese Frosting

Sourdough Carrot Cake with Cream Cheese Frosting

Sourdough isn’t just for bread. After making this amazing sourdough cake, you may never go back to your old carrot cake recipe.

Ingredients

1 1/2 cups vegetable oil
2 cups sugar
1 cups sourdough starter
3 large eggs
2 cups shredded carrots
1 cup crushed pineapple, drained
3/4 cup chopped walnuts
1/2 cup shredded coconut
2 tsp vanilla
1 tsp baking soda
1 tbsp cinnamon
1 tsp ground ginger
1 tsp salt
2 1/2 cups all purpose flour
Cream Cheese Frosting 1 stick butter, softened (8 tbsp)
1 pkg softened cream cheese, 8 ounces
4 cups powdered sugar
1/2 tsp ground ginger
1 tsp vanilla
2 tbsp milk

Instructions

Preheat your oven to 350 degree’s.

Spray your cake pans with vegetable oil and dust with flour. Set aside until ready to use.

In the bowl of your mixer, add the vegetable oil, sugar and sourdough starter. Mix everything together for about 1 minutes.

Add the eggs, drained crushed pineapple, shredded carrots, shredded coconut, vanilla, baking soda, cinnamon, ground ginger and salt. Mix everything together until combined. If needed, scrape down the side of the bowl as needed.

Add the all purpose flour and mix until combined. Scrape down the sides as needed.

Divide the batter between the two prepared cake pans. If desired, you can bake this cake in a 9x13 cake pan that you’ve prepared the same way.

Bake in your preheated oven for about 40 minutes or until cake is cooked through. I use the toothpick method in the center to make sure it’s cooked all the way through.

Remove the cake from the oven and let it cool in the pans before removing.

To make the cream cheese frosting: add all of the ingredients into the bowl of your mixer and mix everything together until combined.

If you choose, you can add 1 cup chopped nuts to the frosting, I like to sprinkle them on my frosted cake already.

Frost the cake as desired. Serve and Enjoy!

    the sourdough carrot cake that you used a store-bought sourdough starter? Also, what kind of mixer were you using in this episode? Thanks for the onfo…I love your segmwnts!

      This is a homemade sourdough starter. We made it about 4 weeks ago on a facebook live segment with everyone. I’m using a Bosch mixer. You can use a Kitchen Aid or any kind of mixer you want.

      Here’s the link to the sourdough starter. That is a Bosch mixer but you can use any kind of mixer you would like.

    Is this a carrot-less, carrot cake? I don’t see carrots in the recipe.
