Sourdough Blueberry Pancakes
These sourdough blueberry pancakes have got to be a all time morning favorite of mine. Easy to make and delicious, your family and friends will love these for breakfast. Here’s the link for my sourdough start if you need one.
Ingredients
2 cups sourdough start
1 egg
1/4 cup oil
1 tsp salt
1/4 cup sugar
1 cup self rising flour
1 cup milk
3 cups fresh blueberries

To a large bowl, add the sourdough start, egg, oil, salt, sugar, self rising flour and milk whisking everything together to combine. If you don’t have self-rising flour add 1 cup flour plus 1 tsp baking powder.

Preheat a skillet and lightly spray with vegetable spray. Pour out pancakes onto your preheated skillet. I use a 1/3 cup measurer for the batter so each pancake is the same size.

Drop about 8-10 fresh blueberries on top of the cooking pancake. Once the bubbles on top start to pop, check to make sure the bottom of the pancake is golden brown and carefully flip the pancake to cook the other side.

When the sourdough blueberry pancakes are cooked, remove and place them on a serving plate and serve with some fried eggs and bacon if desired. Enjoy!
