
Smothered Pork Burritos
These delicious smothered pork burritos are a great idea for dinner. Fresh, flavorful and easy to make, these smothered burritos are a must make anytime of the week.

Ingredients
4 cups chopped pork
1/4 cup prepared salsa
1 can re-fried beans (16 oz can)
2 cups shredded cheese
Large flour tortillas
Prepared mashed potatoes
Olive oil
For the Sauce:
6-7 peppers (assorted peppers)
6 cups chicken stock
2 tbsp enchilada seasoning
1/4 cup flour

Cut the peppers in half away them on a baking sheet skin side up and place them on the broiler. Char the skins of the peppers, remove from under the broiler and place the peppers in a bowl covered with plastic wrap. Let the peppers “sweat” until cool, remove the charred skins and place the roasted peppers in a blender.

To the blender, add the chicken stock, enchilada seasoning and flour. Blend everything together and transfer the sauce to a pan. Bring to a boil, reduce the heat and simmer for 3-4 minutes, set aside.

To a large fry pan, add enough oil to lightly coat the bottom of the pan. Place the chopped pork prepared salsa and minced garlic in the pan and sauté until the pork is fully cooked.

To the pork, stir in the re-fried beans and shredded cheese until combined.

Spoon the pork filling into the flour tortilla and roll the tortilla up like a burrito. On an oven safe pan, place the burrito seam side down on a bed of mashed potatoes. Ladle some of the sauce over the burrito and sprinkle with shredded cheese. Place the burrito under the broiler to melt the cheese. Remove the burrito from the oven, finish with a dollop of sour cream. Serve with roasted vegetables and tortilla chips on the side.
