Chicken Burrito

Chicken Burrito

You’re going to love these smothered chicken burritos. I like to use leftover chicken to make these burritos.

Ingredients

4-5 roma tomatoes
1-3 serrano peppers, seeds removed
1 cup mushrooms
1/4 cup tomato paste
1 tbsp chili powder
1 tsp cumin
2 tsp garlic powder
2 tsp onion powder
1 cup cilantro
3-5 cooked chicken breasts, shredded
2 cups black beans
2 cups cooked rice
flour tortillas
salt and pepper to taste

Instructions

In a blender, combine the roma tomatoes, serrano peppers, mushrooms, tomato paste, chili powder, cumin, garlic powder, onion powder, and cilantro. Process until smooth. Transfer to a large saute pan along with the shredded chicken. Bring to a boil, reduce heat and simmer the sauce and shredded chicken for 5 minutes.

To the shredded chicken, add the black beans and cooked rice. Stir to blend. If wanted, add an additional 1 tsp each of garlic powder, cumin, and onion powder to the cooked chicken mixture and stir to incorporate.

To make your burrito, warm the tortilla and spoon a generous portion of the shredded chicken mixture down the center of the tortilla. Roll the tortilla up. Top with shredded cheese, lettuce, tomatoes, onions, sour cream and cilantro. Enjoy!
