Ingredients

1 cup Extra Virgin Olive Oil
2 tbsp Aged Balsamic Vinegar
1/4 cup Chopped Sun-Dried Tomatoes
1/4 cup Chopped Pitted Olives
1 tbsp Minced Garlic
1/4 cup Chopped Italian Parsley
2 tbsp Basil Chiffonade
Zest of 1 Lemon
1 tsp Spanish Smoked Paprika
2 tsp Red Pepper Flakes
Pinch of Flaky Salt

Instructions

Prepare Ingredients: Place the sun-dried tomatoes, pitted olive, garlic and parsley in a food processor and pulse to chop them up. Prepare the basil chiffonade by stacking basil leaves, rolling them tightly, and slicing thinly and set aside. Remove the zest from the lemon and set aside.

Mix the Topping: In a medium bowl, combine the extra virgin olive oil and aged balsamic vinegar. Add the chopped sun-dried tomatoes mixture. Stir in the basil, lemon zest, Spanish smoked paprika and red pepper flakes gently mixing to combine. Season with salt and pepper to taste

Assemble the Hummus: Spread your freshly made hummus in a shallow serving dish or a large plate, creating a slight well in the center. Generously spoon the Smoky Tomato Topping over the hummus, ensuring even distribution.

Serve: Garnish with a little extra parsley or basil if desired. Serve immediately with warm pita bread, pita chips, fresh vegetables or your favorite dipping sides.
