Ingredients
1.5 lbs boneless, skinless chicken thighs
2 tbsp olive oil
2 tbsp lime juice (1–2 limes)
1 tbsp chipotle in adobo, minced
1 tsp ground cumin
1 tsp smoked paprika
2 cloves garlic, minced
½ tsp salt
For the Roasted Poblanos:
2 medium poblano peppers
1 tbsp olive oil
Pinch of salt
Avocado Lime Crema:
1 ripe avocado
¼ cup plain Greek yogurt
1 tbsp lime juice
2 tbsp chopped cilantro
1 small garlic clove
Pinch of salt
Assembly:
8 small corn tortillas
½ cup chopped red onion
¼ cup chopped cilantro
Lime wedges, for serving
